When you say "Phone" you mean Phone field from plugin "User Profile" (screenshot)

These fields not come from Easy Profile or Joomla core, this comes from a plugin called "User Profile" (you can manage this from Extensions->Plugins).

In User List you can show only Easy Profile and Joomla core fields.

Normally "User Profile" plugin is disabled by default in all Joomla installations.

So, those fields that do not come from Easy Profile or Joomla core are not available to use in the Table list display.

I went to Extensions>Plugins and did not see a way to make them available.

Any ideas? I'd really like to get the phone number to show in the Table list.

Hi,
sorry but Easy Profile can manage only own fields in User List, you may have many users plugins that add/customize edit profile page and each plugin can work with a different way. So, it's impossible make a integrations with all users plugins.
