I downloaded the free version to try it but something is not clear about languages. how can we translate the new fields ? is it possible or is it in paid version ? thx for your help.

Easy Profile use Joomla built in language system.
See this example:
- Create a Field with title called "GENDER"
- Now go in Administration->Extensions->Language Manager->Overrides (left menu)
- Here you can create create translation for each language for constant "GENDER"
English: GENDER -> Gender
Italian: GENDER -> Sesso
French: GENDER -> Sexe
