remove "last name"

you can set "Name Style" from Easy Profile options (Components->Easy Profile->Options), this option automatically enable/disable core fields that compose the Joomla name.

unlock a field

what do you mean with "unlock"?

I want to turn it off/hide when the user is logged. Possible?

sorry this is not possible, this is core field and it compose Joomla core name.

You can make this workaround:
- In Easy Profile options set "Name Style" to "Only name"
- Create a Text type custom field only available on edit profile page (ie. alias "my_lastname"
- In Easy Profile options set "Display Format Name" to "Custom"
- In Easy Profile options set "Custom Display Format Name" to "{firstname} {my_lastname}"

NOTE:
This solution will works but Joomla name will be only composed by "firstname". With other extensions not compatible with Easy Profile you will see only firstname (Joomla name)
