Yes, but you cannot create unlimited fields, because for each field corresponds one column in DB, Mysql have a hard limit of column. With basic Mysql configuration I think 80-90 fields.

And then some special users to be able to do an advance search based on the profile fields filled by the users.

Yes, but we not provide you a translation. You can create your language as other components of Joomla. The language files are located in:
front-end: /language/en-GB/en-GB.com_jsn.ini -> /language/el-GR/el-GR.com_jsn.ini
back-end: /administrator/language/en-GB/en-GB.com_jsn.ini -> /administrator/language/el-GR/el-GR.com_jsn.ini

2) Also, i need to add "Simple Users" that register to the system but will not have any search priviledges, from "Advanced Users" that are able to do and advanced search to "Simple Users" only.

1) You can use SQL custom WHERE to restrict result of users list, see docs at:
