Is there a way that people can just register without having to activate their account with an email and be activated by a super administrator in the backend?
I just want people to be able to register and then access the site.

Yes, but is not a Easy Profile feature, is a Joomla feature.

Go to Administration->Users->User Manager->Option and change the option 'New User Account Activation'
