I have a large number of users with dummy email addresses that I would like EasyProfile to prompt replacements for if a user logs in. Similar to prompting for missing mandatory fields.

sorry but this is not possible, anyway Easy Profile extends Joomla user management (not replace it) so the registration and edit profile forms are the same of Joomla, so it's possible to add some user plugin from third parties that do this.
