I've got a few questions. If it makes sense to separate these into different topics, then feel free to do that (or I can - please advise).

1) How do I disable the clicking on and viewing of a user profile from a User List report - I do not necessarily want other users to be able to click through to view another user's profile (even if much of that profile is marked public)

2) How can I have a profile field be a) editable on one's own profile page AND b) viewable on one's own profile page AND c) NOT viewable by other users (ie. when clicking on a user list)?

3) Are there any formatting options available for the View Profile and Edit Profile areas? Where do I change these, or does all this formatting come from my Joomla template and style sheet, etc?

1)
You can override User List template and remove from override the link to user profile.
to apply this override copy file from /components/com_jsn/views/list/tmpl/default_user.php (table_user for Users Table menu type) into /templates/your-template-folder/html/com_jsn/list/default_user.php and edit the new file. Override template is a Joomla feature.

2)
a) You can't edit fields from profile page
b) Set field to is available in profile page
c) Set "Visibility for parameter" to "Special" (see tip for more info, see screenshot)

3)
