Hi,
We have developed a student manager component (Joomla3) for schools.
(A total of 30 000 students on 17 schools in Egypt)
We are using the normal Joomla users and groups.
But we have many other fields that is relevant to the school situation.

Can Easy Profile be used to get the info from our components. Each component has its own table, all in one database..

this question is too general!
Anywhere no, Easy Profile have a own table to store data. You can create a script to fill our table with other component data.

Note: Easy Profile extends Joomla Users component (not replace), if your other extension do the same thing, then they can coexist.
for example: Joomla have a built in plugin (disbled by default) called User - Profile (this add some field to user registration/edit profile like address,TOS,about me,etc..), you can use it with our component because it also extends Joomla User component.
