Is there anyway to have easy profile send a verification email if the user changes their account emails address after registration to ensure that it's a working email and theirs?

Easy Profile have this feature built in Basic and Pro version, you can enable it from Components->Easy Profile.>Options, go to section "Core Fields" and enable parameter called "Require activation on new email when user change it" ;)
